Banitsa is a traditional savory Bulgarian pastry made from handmade phyllo dough. The dough is pulled and thrown overhead to stretch it until it is so thin you can see through it. It looks a bit like a billowing sail into which we fold a mixture of feta cheese and egg (traditional). It is baked until golden brown and puffed up, a process that creates pockets of warm filling surrounded by crackling pastry.
