Banitsa is a traditional savory Bulgarian pastry made from handmade phyllo dough. The dough is pulled and thrown overhead to stretch it until it is so thin you can see through it. It looks a bit like a billowing sail into which we fold a mixture of feta cheese and egg (traditional). The result is a surprising combination of crispy, flaky and chewy. You won't be disappointed!
